Picadillo

I love to cook.
It's one of those things that everyone who knows me loves. They just show up and they know I'll whip something decent up and that they'll get to take leftovers home at the end of the day.

Well today I got the special treat of learning a new recipe that I'm going to share with all of you (yes... this is really a change from My Politicophobia)... Today Wendy was gracious enough to teach how to make picadillo... but actual, real and good picadillo... Here it goes.

Here is your base... you fry all this at low temperature...
Half a green pepper.
Half a spanish onion.
Two pinches oregano.
Half a clove of garlic.
4 table spoons of olive oil.
Cayenne.
Dried hot peppers.

Next you put about 500ml of tomato sauce and a cup of water in a big pan or pot. Heat it up on low heat.

Take 1 pound of ground beef and massage a punch of salt (yes a punch) and about half a cup of balsamic vinegar into the meat.

Dump your base into the tomato sauce, add olives and bring to a bowl on low heat.

Once that's done, add the beef and about half a cup of either water or vino seco and simmer for about an hour.

Serve on top of plain white rice...

And enjoy the hell out of your meal... It smelled so good I even closed the windows in my house to keep the smell in the house and as an added bonus: I ate so much I almost made myself sick.

Apparently, Wendy and I are the only Cubans who make it with hot peppers and Cayenne, which is great. Besides the green olives, add capers and raisins. I don't tend to use much water, just crush tomatoes sauce with some basil. Add a spoonful of honey, and a shot of rum to it. Drink the rest of the bottle of rum, don't throw it to waste.
